26、 During the early days of the COVID-19 pandemic, when restaurants first shut down, Americans started cooking more at home. They had more leftovers (剩菜). In general, leftovers can be a convenient future meal. But they have a dark side, too.
Leftovers and other unspoiled (未损坏的) foods that we throw away are called food waste. We create food waste in many places—on farms, in supermarkets, at restaurants and even at home. It is a large problem that wastes resources and causes pollution.
For example, growing, packaging and transporting food takes a lot of space, energy and people to make it happen. When we throw food away, we also waste all of the energy that goes into these processes.
Roe and his team wanted to study food waste. They decided to concentrate on leftovers. They tracked (追踪) the eating habits of 18 men and women in Baton Rouge, Louisiana. They tracked what they ate using an iPhone app. During the 7-day study, they gathered 1,200 different foods on their plates.
They found that people were more likely to pick at leftovers and not eat them fully. Also, eating leftovers seems to inspire (激发) eating other foods. This is perhaps because the leftovers are older and less fresh. Roe says there is a big lesson on how to avoid throwing food into the dustbin: choose smaller meals.
