    Led by a man named Wim Hof, known by some as the Ice Man, cold water immersion is gaining popularity. You may recognize his name from the documentary The Superhuman World of Wim Hof: The Iceman. Hof’s documentary retells how he found himself tragically alone with four children after his wife died in 1995. 【2】 One morning, while overlooking a cold stream in the Netherlands, he had the urge to jump in.

    Feeling the intensity of that cold, Hof grew the strength to push past physical and mental limitations. He continued his practice of cold immersion alongside meditation (冥想) and breathing techniques. 【3】 It was through this practice that he discovered the physical and mental health benefits of this combination of breathwork, meditation and cold immersion.

    【4】 According to a cold-water research in the British Journal of Sports Medicine, cold water can have physiological effects including an increased heart rate, faster breathing rate and higher blood pressure. And, a study of 3, 108 people, published in the journal PLoS One, found that people who take cold showers are 29 percent less likely to call in sick. The researchers concluded that cold showers could make the illnesses less severe.

    So if you want to obtain the benefits of cold-water immersions, you don’t have to start by jumping into an ice bath. Hof’s programs often begin with short breathing exercises followed by a 30-second cold shower. 【5】 And they really could keep the doctor away!

  • 23、The students stand on a pier (码头) over the Harlem River in New York City. They stare down into the brown water. Their teacher, Mr. Rodman, pulls a long rope out of the river. If algae grow too fast,they can decrease oxygen from the water-and even fish need oxygen to breathe!

    But what happened to the oysters 100years ago in New York Harbor? Before then, lots of oysters lived in these waters. They were shipped to restaurants around the world. By the early 1900s, people were eating them faster than they could grow. Pollution was pouring into the waters. The harbor became seriously polluted. Since the 1970s, new laws have helped reduce poisonous waste. Some fish started to swim through again. But oysters were still missing-until recently.

    The Billion Oyster Project began in 2014 to help bring oysters back to New York Harbor. The project has recruited (招募) more than 6,500 students at more than 100 middle schools and high schools to help grow, distribute, and study the oysters.

    Finally, the students put the oysters back in the cage. Mr. Rodman lowers the cage into the river. In a few months, they will check the cage again. When the oysters are big enough, they will be moved to join a healthy reef in the middle of the harbor.

It became my favorite dish.

    Along with the stinky tofu, I would meet my Uncle Chan on every visit. As an immature boy, I never understood my uncle’s condition of Down syndrome(唐氏综合征).

    He was an unfriendly and terrible creature in my eyes. He constantly walked around the house, talking to himself. Whenever he was within view, I would run away in fear.

    However, one day, my view of my uncle suddenly changed. I was just getting out of my bed when I heard soft steps approaching. It was my uncle. My muscles froze. He slowly sat next to me and touched my face gently, as a mother would stroke (抚摸)a baby.

    A wide smile emerged from his blank expression. How beautiful his smile was! I could not help but smile back. My fear disappeared gradually, and my muscles relaxed. For the first time, I could see softness and warmth in his eyes.

    My uncle very much resembles stinky tofu. Stinky tofu smells unpleasant on the outside,  yet  feels  warm  and  soft  in  the  inside.  Like  stinky  tofu,  my  uncle’s  Down syndrome made me keep my distance at first. Yet, I learned that deep inside, he is harmless and has a loving nature.

    Some people tend to look down upon disabled people and regard them as unfit for a regular life. As I was able to see through the outer surface of the tofu, these people are unable to see through the surface of prejudice(偏见). As a result, they judge the disabled with one glance.

    The outside and inside of the stinky tofu exist as two extremely different worlds. Perhaps that is what makes it such a tasty dish. Not only is it delicious, stinky tofu offers a valuable lesson: never judge people at first glance, for true beauty comes from the inside.
