21、WHEN KIM JI-UN lived in Seoul, she worried about finding a good job. Now, she is worried that drought may ruin her crop. The 23-year-old started a farm last year. Her first harvest was a success; she was surprised that her black beans did better than her strawberries.
Ms Kim is part of a phenomenon called kitchen, or returning to rural life. Coined a millennium ago, the term crops up during periods of economic hardship. This time, in the wake of the pandemic, many new farmers have never lived in the countryside before. By planting young farmers in rural areas, the government hopes to enjoy big rewards in future.
The plan is working. In 2021 nearly 380, 000 people moved to the countryside. Comfort with digital technology gives young farmers a leg up, says Cho Kyung-ik, the director of the Beginning Farmer’s Centre, an institution educating those who wish to kwichon at its downtown offices. They sell fresh produce on Naver, South Korea’s largest search engine.
The centre teaches techniques like how to use a tractor(拖拉机) or select the best crops. It arranges a trial period during which ambitious farmers work under the guidance of an old hand, learning what it means to do back-breaking labour from dawn to dusk.
The most important lesson is how to get on with the locals. The villagers are also offered tips on how to act towards the newcomers. That part is not yet a total success. Ms Kim says her neighbours have a bad temper. “The old people come in here and give me unwanted advice, or say that I will never be able to grow anything, ”she says. Her black beans beg to differ. She and the South Korean government will be hoping that her crops put the argument to rest for good.

How to meet the need of feeding the growing population? One way is to introduce some high-output gene into a crop to enable it to produce more. Biologists over the years have discovered genes which can raise output of the crops, resist pests, improve taste, etc.

As a scientist I must admit GM foods involve great risks to humans. In fact in Europe they’re called “Frankenstein foods” by many. Frankenstein is a character in a novel. He was a very clever scientist. He created a monster(怪物), which eventually killed him.
Soybeans can be made into many foods. However, it’s hard to trace them. Therefore, it’s very important we have to make sure the soybean, if genetically modified, is free from any poisonous matter harmful to human beings. For this we need very good testing. We do have some testing on some animals, but no completely satisfactory testing has ever been made so far. They’re entirely new, and their problems are entirely unknown. It takes time to develop persuasive tests to know whether they’re harmful to us or not.
We may not be able to tell what may happen if we take GM foods. Some of them may be resistant to antibiotics (抗生素). Then many of the medicines we have today will have no effect on people eating GM foods.
A more likely case is the GM foods may contain genes some people are allergic to.
GM products have already come into our lives but most people even know nothing about it.
At least we have to be clear about what we are eating. The China Consumers Association is calling for labeling (标注) on GM foods so that consumers will know before they buy them.

24、Most people find sugar hard to resist. Our brains need lots of energy and sugary foods provide plenty of it. But when calories are too readily available, it is easy to overdo it. There has been no shortage of research on sugar replacements without the calories, but evidence from animal and human studies has linked some to weight gain. One promising alternative is found in the fruit of Synsepalum dulcificum (奇迹果), a plant native to West Africa. These so-called miracle berries don’t taste sugary themselves, but if you try something sour afterwards it will taste unusually sweet.
In Benin, the fruit is eaten fresh and is mostly used as a sweetener to have with sour foods and drinks, says Dedeou from a university in Benin. The berry with miraculin(奇迹果蛋白)is very appreciated by local consumers, especially the kids and people with diabetes (糖尿病).
Despite the miracle berry’s promise as a sugar replacement, it is only produced on a limited scale and isn’t available worldwide. The berries don’t travel well and the plant is slow to grow.
To create an alternative source of miraculin, researchers at the University of Tsukuba in Japan have genetically engineered tomatoes to produce the protein, but this isn’t necessary, says Tchokponhoue whose team is working to help enlarge the production of miracle berries in West Africa. Earlier this year, a team at Hainan University in China published the genome(基因图谱)of Synsepalum dulcificum, which may help.
Spanish start-up Baia Food has plans to promote sustainable growth of the plant in Ghana and market the dried berries. You can order tablets of freeze-dried miracle berries online but they are pricey, costing around £18 for a pack of 10. If you can afford it, the berry’s taste-twisting power is fun to try at home. Let the tablet melt on your tongue, then try tasting acidic foods such as lemons. The effect should last between 15 and 60 minutes.
