22、Franco Bergamino is like a surprise “hidden recipe” among young people in southwest China’s
Chongqing Municipality, where the 62-year-old Italian chef runs a dessert house called Mimosa.
The dessert house serves wine jelly with green pepper cheese, jasmine mousse and peach-Oolong cake—fusion (融合) desserts that combine Italian specialties with local Chinese ingredients (原料).
Bergamino used to run two dessert houses in his hometown of Turin, both having a history of 90 years. In 2016, he settled in Chongqing and set up a dessert workshop.
“I especially like Chongqing, where the food and culture are completely different from my hometown. Life here is like ‘the other side of the coin’,” he said.
With the help of his local English-speaking friends, he overcame the language barrier and even learned some Chongqing dialects (方言). More importantly, he has got used to the Chinese table culture of “sharing food together”.
Bergamino said, back in Turin, frequent customers to his shop would buy the same desserts and they would be disappointed if they were sold out. The situation in Chongqing, however, is very different. Customers expect different desserts each month, and they would be disappointed if the dessert menu stayed the same, he said.
From 2016 to 2022, Bergamino felt a huge change in the taste of Chinese customers. “In the past, Chinese guests always said that my desserts were too sweet. Now more and more people have accepted the authentic Italian tastes. Mimosa’s consumers are mainly between 25 and 35 a group that is more willing to try overseas tastes partly due to China’s continued opening to the outside world,” he said.
“I hope I can live to 95 and still work,” he said, so that he can, besides bringing authentic Italian desserts to more customers having a sweet tooth, let more people feel the fusion of Chinese and Italian cultures in his desserts.

23、For many health-conscious people, bread is a little slice of hell. Shelves of multigrain loaves—or friends passing around sourdough (酵母面包) starters and attaching the word artisanal (手工艺性的) to the ancient combination of yeast (酵母), flour and water—have led consumers to believe whole grain bread is healthier than industrial white bread. That trend has made for a lot of expensive sandwiches.
Fortunately, a new study by researchers at the Weizmann Institute of Science is here to cut through the confusion. In the study, published in Cell Metabolism, researchers randomized 20 participants to consume either processed white bread or artisanal whole wheat sourdough in order to compare the effects of each on the body.
Before the study started, all participants consumed the same amount of white and nonwhite bread for several days. Then each group ate, on average, at least 100 grams of bread—three to four slices—per day for one week. After a two-week break, the groups switched types for another bread-laden week. The total amount of calories the participants consumed remained constant the duration of the study.
The researchers were surprised by what they found. “There were no clinically significant differences between the effects of these two types of bread on whatever we measured,” said computational biologist Eran Segal, senior author of the study in a statement. Those measured included glucose levels upon waking, fat and cholesterol levels, the amounts of essential minerals in the bloodstream and several indicators of tissue damage. Segal and colleagues examined 20 variables and found not one notable difference between the white bread eaters and the artisanal bread eaters. The key finding: It wasn’t that both breads had no effect on the body. Rather, they both did equal damage. As it turns out, half the participants had a higher glycemic response to industrial white bread, and half had the higher response to artisanal sourdough bread.
The researchers also found that which bread was best for you can be predicted based on the bacteria present in your body. They found that the “profile”—the variety of bacterial species—correlated with the glycemic (血糖) response to each bread. The small size of the study means the results should be considered preliminary. The researchers hope to study these predictors more carefully as a potential way to improve nutritional recommendations, says biologist Avraham Levy, another study co-author.
In short, the study provides vital evidence that we need to stop judging each other in the supermarket bread aisle.

Unlike birds, which make sounds in the same way, Audrey Looby, a fish-sound researcher at the University of Florida, says that fish make sounds in different ways. Fish do not have specialised vocal cords or voice boxes. So, one of the most common ways they make sounds is through tribulation — like clicking their teeth or rubbing their pectoral fins against other structures. Many others make sounds with their swim bladders, which they use primarily to stay level in the water.
Scientists are unsure how many fish make sounds, but some estimate that it might be as many as 22,000 types, which is two-thirds of about 34,000 known species. And those are just the sounds fish make on purpose — to call to mates, to let other fish know they’re in trouble or to communicate that “this is my area of the reef, listen to how tough I sound so why don’t you just swim away,” Looby says. Fish also make passive sounds, such as chewing noises as they munch on seagrass or algae.
