  • 22、More often than not, we think the taste of food is largely to do with the ingredients (成分) and the way it’s cooked. However, according to a new study published in the Journal of Consumer Research, sitting and standing also affect how we enjoy food.

    It turns out that food tastes better when we’re sitting down. Lead author Dipayan Biswas, a professor from the University of South Florida in the US, looked specifically at how the vestibular (前庭的) sense, which is responsible for balance, posture and location awareness, works with our sense of taste.

    He found that standing for even a few minutes causes people to feel physical stress. This makes our taste buds (味蕾) less sensitive. Gravity pushes blood to the lower parts of the body, causing the heart to work harder. This increases the heart rate and leads to increased stress hormones (荷尔蒙). All of these reduce sensory sensitivity, which impacts taste and flavor. Our mouths can’t taste or feel temperature as well when this happens.

    When people experience discomfort, foods that normally taste good aren’t as pleasing, says Science Daily.

    Biswas gave 350 participants each a pita chip and had them rate its tastiness. Those who stood while eating gave it a lower rating than those who sat in comfortable chairs. Next, Biswas and his team gave participants bite-sized brownies from a well-known local restaurant. These brownies are widely considered to be very tasty. Those who sat down to eat rated them highly.

    However, when the baker added extra salt, the results were opposite. Participants who stood up to eat the brownies didn’t notice that the brownies tasted salter, while those who were seated found the brownies weren’t so delicious.

    In addition, the team tested posture’s effects on temperature perception (感知). Participants were given cups of hot coffee. Those who stood up didn’t think it was so hot. However ,they drank less than those sitting, suggesting on that physical stress may also impact appetite (食欲).

    So if you really want to enjoy your meal, try to find yourself a comfortable seat. But if you’re trying to lose weight, eating while standing could be helpful because people tend to eat less while standing. Plus, the physical stress of standing may burn more calories.

    However, a new study shows that the drop in temperature is a good reason to run. In fact, researchers say, running in cold weather helps improve one’s performance.

    Many people say running in the winter can be difficult. Two reasons are the low temperatures and bitter winds. Yet many runners might find it easier than running in hot weather.

    That could be because lower temperatures reduce stress on the body. When you run in cold weather, your heart rate and the body’s dehydration (脱水) levels are lower than in warmer conditions. The body needs less water on a cold day than in warm weather.

    This information comes from sports scientists at St. Mary’s University in London. John Brewer is a professor of applied sport science at St. Mary’s.

    For this study, he and other researchers put a group of people into a room they called an “environmental chamber.” The researchers then recreated summer and winter weather conditions in the room. The test subjects were asked to run 10,000 meters under both conditions. Brewer says he and his team recorded biological measurements of the runners.

    “We’ve got a group of subjects into the environmental chamber, we’ve changed the conditions to replicate the summer or winter and we’ve got them to run a 10km under both of those conditions and taken various measurements on each runner while they’ve been completing their 10km.”

    Brewer says every movement runners make produces heat. He explains that one way in which we lose heat is by sweating. The body loses heat through droplets of sweat. He says the body also loses heat by transporting the blood to the surface of the skin.
