  • 21、   Mauro Colagreco is the only Argentinean chef who has been awarded three Michelin stars, the highest distinction for international cuisine(烹饪). His restaurant on the French Riviera, Mirazur, is considered one of the best in the world, but when it was forced to close its doors temporarily, Colagreco found a way to use his cooking skills to serve the community.

    During normal times, Mirazur does great business. But in March, Mirazur had to close its doors due to the coronavirus lockdown. Within days of the reopening in June, Mirazur had already filled up all its reservations for the rest of the year.

    The months of closed doors were not a rest for Mirazur’s staff, however. Colagreco and part of Mirazur!s team, instead of standing by, used this time and their talents to aid in the fight against the virus. On April 2, Mirazurs kitchen, so unique that its menu is a surprise every day, moved its headquarters to nearby La Palmosa Hospital to cook for the health care staff.

    Twice a week for two months, the cooks prepared meals to honor those who were facing the pandemic on the front lines. They gave these hospital meals the same elegance and combination of flavors as their dishes at Mirazur. Everything was made with products from the restaurant’s garden, from which its menu is usually nourished, and donations from local suppliers.

    A native of La Plata, and trained by Argentine chefs Beatriz Chomnalez and Carlos Alberto “Gato” Dumas, Colagreco has been living in France since 2001. As time went by, his name began to stand out and great new restaurants started to bear his signature. In addition to Mirazur, for example, he opened Grand Coeur in Paris, and L'Estivale by Mauro Colagreco at Nice Airport, Cote d'Azur.

    Although he has been an expert in cooking, Colagreco’s work for good causes shows that, like the produce he grows, his roots are firmly in the ground.

    In the International Journal of Obesity study, some 9, 276 Australian women aged 4550 had their body weight and employment status monitored for two years. Results? Those who worked more than 35 hours were likely to gain weight compared to those who worked fewer hours or were out of the workforce. What' s more, the more hours a woman worked in a week, the more weight she gained.

    The authors of the Australian study attribute weight gain among working women to inactivity, lack of time for food preparation, more use of prepared foods, high levels of stress, lack of sleep and consuming more alcohol. I'll also add in travelmeals eaten out and working at night as other factors that I can find to make balancing work with a healthy diet a challenge.

  • 23、We humans often say that a growling dog is “angry” or a purring cat is “happy”. But those terms are of little use to scientists like David Anderson who studies the brain circuits (脑回路) involved in emotional behaviors.

    “We have to do more than just project our own emotions onto other animals,” he says. Yet Anderson describes research from his lab that suggests the brain circuits underlying human emotions have a lot in common with circuits found in animals’. “What lies beneath feelings,” he says, “is brain states that produce certain behaviors. And that’s the part of emotions we share in common with animals and that scientists can study.”

    For example, Anderson’s lab has investigated fruit flies that become much more active when they see a moving shadow looking like their natural enemy. “We see that the more times we deliver the shadow the jumpier the flies become,” he says. And the flies keep jumping long after the shadow is gone. Anderson would behave much the same if he saw a snake. “I’d jump in the air,” he says. “Even for minutes after the snake had slipped away into the bushes, my heart would be pounding, and I’d probably jump every time I saw a snakelike object—even if it was a stick.”

    That sort of behavior is typical of an ongoing brain state called defensive arousal(防御性唤醒). It’s present in both fruit flies and people which is why Anderson believes studying fear of an insect or a mouse is meaningful as it can reveal a lot about human emotions. “We can try to figure out how the brain is generating that state and what makes the animal finally calm down,” Anderson says. “We now understand specific parts of the circuit that increase fear and other parts of the circuit that decrease fear,” Anderson says. The next step, he says, is to figure out how to tweak that circuit to reduce the fear response of people with certain diseases like PTSD.

    How Colleges Can Measure Up in Teaching “Critical Thinking”

    After becoming president of Purdue University in 2013, Mitch Daniels asked the teaching staff to prove that their students have actually achieved one of higher education’s most important goals: critical thinking skills. 1 Mr. Daniels needed to justify the high cost of attending Purdue to its students and their families. After all, the percentage of Americans who say a college degree is “very important” has fallen dramatically in the last 5-6 years.

The results of a recent experiment showed that professors could use standard grading scale to measure how well students did in three key areas: critical thinking, written communication and language literacy.

    3 The organizers of the experiment concluded that far fewer students were achieving at high levels on critical thinking than they were doing for written communication or language literacy. And that conclusion is based only on students nearing graduation.

    American universities, despite their global reputation for excellence in teaching, have only begun to demonstrate what they can produce in real-world learning. Knowledge-based degrees are still important, but employers are demanding advanced thinking skills from college graduates. 4
