  • 21、“Inspector Sands to the control room, please.” If you ever hear that at a British train station, don’t panic. But you might appreciate knowing that this is a codeword meant to inform staff that there is an emergency somewhere in the building. The idea is to avoid causing alarm among commuters (通勤者), but still get the message out to those trained to deal with the problem.

    The subject of secret codewords like this was raised this week on Reddit, and the discussion has attracted thousands of examples. But what codewords and signs are really out there in the wild?

    A good place to start is hospital emergency codes. These are often colour-coded, and one health centre in Canada has published its list online. “Code red” announces a fire, “code white” indicates a violent person while “code black” means a bomb threat is active. It’s been reported that hospital staff sometimes refer to the morgue as “Rose Cottage”, in order to avoid upsetting relatives of a patient who has recently died.

    “I can see very good reasons for having these codes,” says Paul Baker, a linguist at the University of Lancaster. “It may be that people are unsure when they’re giving the code so there’s no point upsetting members of the public.”

    Not all codes are alphanumeric (字母数字的). Some are visual, intended to be hidden in plain sight. As BBC Future discovered earlier this year, many banknotes feature a specific pattern of dots placed there to prevent people from photocopying money. Many copiers and scanners are programmed to spot it.

    And finally, the spray-painted squiggles (波形曲线) you see on pavements in towns and cities all over the world are codes understood by construction workers and engineers. For example, in UK, different colours are related to different types of cable or pipe. Blue meant a water system while yellow indicated gas lines and green labelled CCTV or data wiring.

    All of these codes have a purpose — to avoid causing panic, to transmit subtle signals in social groups, or to provide technical information quickly and easily. “People don’t like secrets, do they?” says Baker. “There is a drive to have as much information as possible — we do live in the information age,” he adds.

    Eye-catching Advertisements of vehicles are one thing, but as the industry’s trouble shows, working out how to make cars at scale, when softwares are as important as brakes and bodywork, is quite another.     In 2010, a crew of six people did. They sailed on the Plastiki, an 18.3-metre boat made from recycled materials. Everything about the Plastiki was environmentally friendly. For food, they mainly survived on fresh vegetables grown in a hanging garden as well as canned and dried food. They also ate fresh fish, but were surprised to discover that they found more plastic than fish. “From above, the oceans still look beautiful and untouched,” David said, “but just below the surface is this toxic stew that could quickly end up on our dinner plates.”

    The leader, David, organised the voyage in order to draw people’s attention to the environmental dangers our oceans face and the need to recycle plastic. He planned to visit damaged coral reefs and islands in danger from rising sea levels. However, his most important objective was to see the Great Pacific Garbage Patch, a huge mass of plastic particles floating in the North Pacific. David hoped that, by sailing through the Patch, he could show the world how serious plastic pollution had become.

    Unfortunately, the Plastiki was more difficult to control than expected. Therefore, the boat missed its main destination. However, the crew did make stops at islands in the mid-Pacific, where they picked up supplies and talked to local students. Along the way, they battled fierce ocean storms, torn sails and temperatures that reached up to 38°C.

    When the Plastiki finally sailed into Sydney’s harbour, the crew were greeted by cheers. The Plastiki’s journey had shown that if we understand how to use waste materials efficiently, they can be transformed into valuable resources. It had also revealed that it was more important than ever to deliver a serious message: our oceans are filling up with plastic faster than we thought.

  • 24、Archan Chan recalls her first experience working in a Chinese restaurant more than 14 years ago. Employed as an apprentice(学徒)chef, she was one of just two women in the kitchen – the other’s sole job was to beat eggs. “She was unbelievably fast at beating eggs. I guess for a woman to survive in a traditional Chinese kitchen back then, you had to be the best in something,” she says.

    Today, Chan leads the kitchen of Ho Lee Fook, one of Hong Kong’s most popular restaurants. After spending more than a decade working in fine dining restaurants in Australia and Singapore, she is one of a few female chefs who have risen to the top of a high-end Chinese restaurant. That’s an impressive feat, given how incredibly challenging it has been for women to soar in high-profile Chinese kitchens.

    Female chefs have long been a minority in professional kitchens around the world. But the situation is even bleaker in Chinese kitchens. There’s no denying the work is physically demanding – an empty pot weighs about 2.2 kilograms – but there are other factors at play.

    In the past, masters of many Chinese kitchens would recruit apprentices and pass their skills to them. Few chefs would risk recruiting a female trainee into that harsh environment.

    Given all of these barriers, not many women would even consider this male-dominated industry as an attractive career path. Thankfully, there are signs of a shift in mindset – the number of female Chinese head chefs has been rising in recent years.

    “Even if it’s a male-dominant kitchen, all everyone cares about is food – the cooking. They don’t care if you’re a male or female. Gender shouldn’t matter,” Chan says.

    “Yes, there is a physical barrier but I think the mental barrier may be more obstructive(阻碍的)to the increase of women in Chinese kitchens,”Chan adds. “It isn’t just about how much you want it but how much hard work you’re willing to put into it. There are days when you feel like your arms are falling apart and you can’t move them anymore, but the next day, you’re stronger and may be able to work a heavier work.”
