  • 21、   When Joanne Morton and Lydia Shaw came across the Boston Public Market, which features only New England businesspersons, they knew they had to stop in. The women, visiting from southeastern Connecticut, always try to buy local. “We always try to support our local farmers and businessmen,” says Ms. Shaw. “We’re not into big companies,” adds Ms. Morton.

    They aren’t alone. A great number of Americans continue to be attracted by “local” food and to buy it, according to recent surveys from the International Food Information Council Foundation, the Pew Research Center, and British polling firm Ipsos. But what does it mean to shop local? For some, local is still a matter of geography. For others, it is about supporting their local economy (经济). And for still others, it is about knowing where their food comes from and how it is made, even if it is coffee shipped from a Costa Rican company. In 2008, Congress passed a bill that gave money to support local food. According to the Food, Conservation, and Energy Act, a product that can be considered local has to travel less than 400 miles.

    But Lydia Zepeda, a professor at the University of Wisconsin-Madison, has found the largest agreement about what is local is any product that comes from within an hour’s drive. “But is that with or without traffic?” She asks. “What if it crosses state lines?” adds John Hayes, a food science professor at Pennsylvania State University. “A customer might like to buy local to help an old town,” he says. “Or maybe it’s just because local food tastes better.” It is for Kaitlin Bohon. “I taste a difference,” she says at the Boston Public Market. For Ms. Bohon, buying local is both about supporting New England business and knowing who grew and handled her food.

  • 22、Besides soil, all plants need water. This makes it hard to grow plants where it’s dry. But this problem may soon be solved by researchers. Their invention is a super-moisture-absorbent gel (凝胶), or SMAG.

    “The gel-based material can be used as a soil enhancer, as well as alternative soil in greenhouses,” said Guihua Yu, an engineer at the University of Texas-Austin. He led the team that developed the gel. He also said this material could be “directly mixed with soil or fertilizer at certain amounts”.

    The gel works similarly to how dew forms. Dew is those water droplets attached to leaves of grass in the morning. It forms because of differences in air temperature between day and night. Air contains different gases, including water vapor (蒸气). Warmer air holds more water vapor. As the air cools after dark, it loses its ability to hold some of it. When it reaches a certain temperature — known as the dew point — some water vapor will turn into tiny drops of water. When temperature rises the next day, that water evaporates, again turning into vapor.

    The research team decided to use this process to aid plants. The gel mixed with soil absorbs the water vapor and holds it. The next day, the gel instead slowly releases (释放) that water into the soil.

    Jeff Hattey, a soil scientist, says the gel sounds pretty helpful in farming, but you probably won’t see the gel at the hardware store anytime soon. He notes that based on the quantities of the new material used in Yu’s experiments, outdoor fields might require a whole lot of it. According to his research, farmers might have to add about 13 trucks of gel to the soil top per acre (英亩).

    Yu believes future studies will help his team understand if the gel could be used for larger, outdoor fields. “Fortunately, the gel is not poisonous,” Yu says. So it shouldn’t hurt the bacteria or worms that are needed to keep soil healthy for growing things.

  • 24、   Extreme athletes have been using wingsuits(翼装)to fly for many years. However, the pull of gravity makes it impossible to speed up or fly higher. To push past the limitations, Peter Salzmann teamed up with German car maker BMW. The result is an electrified wingsuit, which allows flyers to rise to higher altitudes at the speed of up to 186 miles per hour!

    The 33-year-old professional wingsuit pilot first thought of creating the design in 2017, "At the time, I was developing suits for skydiving with a friend," he explains. "One evening after a day of testing, we threw out lots of ideas about how we could improve performance. One of them was a supporting motor-and it's an idea I just couldn't shake off. I found the idea of being able to jump from my local mountain wearing the wingsuit and land in my garden exciting."

    To help with the process, Salzmann reached out to the experts at BMW's Designworks Studio. It took the team three years and multiple test jumps to perfect the design. The result is an updated version of wingsuit with two 5-inch propellers(螺旋桨), Powered by a battery, the propellers can be controlled using an on/off switch and even stopped mid-flight using the emergency button, if the flyer encounters an airplane or a flock of birds.

    On November 6, 2020, Salzmann, wearing his hi-tech suit, leaped from a helicopter from an altitude of 10,000 feet to soar around the mountain peaks. The expert pilot fired up the electric motors and rocketed forward, gliding above four mountain peaks. The task completed, the pilot opened his parachute(降落伞)and gently landed.

    It is unclear if Salzmann and BMW plan to make the electrified wingsuits available to the general public. But, one can always hope!
