  • 26、   Supermarket shelves are filled with plant-based alternatives (可代替品) to cow milk, including soy, nut, and coconut milk. These products are popular with consumers who cannot drink cows’ milk for health reasons, as well as with those concerned about animal welfare and environmental sustainability. While the dairy-free (非乳制的) options work well with cereal or in coffee, they fail miserably when it comes to making milk-based products like cheese or yogurt. However, these shortcomings may soon be a thing of the past, thanks to a new company in California, which has figured out how to create animal-free milk in a laboratory!

    Perumal Gandhi and Ryan Pandya founded the company in 2014 after becoming increasingly annoyed with the lack of cows’ milk-free alternatives, particularly for cheese. For Gandhi, who stopped consuming animal products five years earlier due to environmental and animal welfare concerns, the motivation to create a better alternative stemmed from his love of cheesy pizza. Pandya was spurred (被激发) to take action after being forced to eat some “really bad” dairy-free cream cheese on his sandwich.

    The two MIT biomedical engineering scientists decided to join forces to create a more realistic alternative to dairy-based products. In their university lab, the pair spent nine months first isolating (分离) cow DNA then inserting it into yeast (酵母). This genetic modification (改造) enabled the yeast to produce the necessary milk proteins. The final step of the process involved mixing the proteins with some plant nutrients and fats.

    The dairy-free milk not only tastes like the real thing but is also healthier, has a longer shelf  life and, most important of all, is Earth friendly. According to the company’s website, when compared to conventional (常规的) milk production, their process uses 65% less energy, creates 84% less greenhouse gas emissions (排放) and requires 91% less land and an amazing 98% less water! Best of all, since it contains real milk proteins, the product behaves like the cow-produced version, which means vegetarian (素食的) consumers will no longer have to deal with the unpleasant cheese on their sandwiches and pizzas.

    The company plans to bring their creation to market later this year and their first product will most likely be cheese since there are already many good cows’ milk products available to consumers.

  • 27、Running and walking are both excellent forms of exercise. Those who regularly do either usually have healthier hearts, stronger bones and lower body weights than those who do little exercise. But does it matter whether you spend time walking or running? Arguments can be made for both, and which is right for you depends on your goals and your present fitness level.

    “The key difference between running and walking is how many calories you are burning—not per mile, but per minute of exercise says Paul D.     In a recent study that analyzed data from nearly 50,000 people, researchers found that runners’ risk of heart disease was 4.5 percent lower than that of those who were inactive. But walkers who burned the same amount of calories daily had a risk level that was 9 percent lower than those who were inactive.

    “Running gets the reputation (名声) for causing injuries because many people who are just starting to run try to do too much too quickly,” says Carol Ewing Garber, a professor at Columbia University. “And they often get injured as a result. If you want to progress from walking to running, do it slowly, gradually increasing your speed, distance and the frequency of your rums.

    Running may be more highly-intense (高强度的) and calorie-burning than walking, but walking is a great way to ease into exercise and make sure you are staying physically active every day. The bottom line is that getting exercise of any kind is beneficial—if you keep doing it.

    “The best exercise is the one you are going to do,” Thompson says. “There are extra benefits to be gained from running, but what’s most important from a public health point of view is that everyone gets out and does some kind of exercise?”

Ms Penarrubia tries to remove all plastic products but if she does purchase any, like olive oil, she will bulk buy in a five-litre bottle and will recycle when finished. This also applies to cleaning products. Glass jars and containers are repurposed after use and kitchen leftovers go in the compost (堆肥) bin. The family grow their own tomatoes, cabbages, broccoli and herbs at home and also have orange and apple trees, while she buys fresh fruit, vegetables and bread in bulk from local suppliers for the week.

    Ms Penarrubia believes changing to a zero-waste lifestyle is easier and cheaper than per-ceived, but admits the challenging part in convincing others that it can be achievable. She said, “If you think and organize your buying habits, consume less things from better quality, choose reusable alternatives, buy everything you can in quantity from the second-hand market—then it’s not more expensive and you can save money. “Zero waste” culture doesn’t only consist of the reduction of our waste, it involves a more conscious lifestyle and way of consumption.
