    Bacteria are the one of the main food poisoners. So, to get food on the table safely, you need to know and follow the rules for food care.

    KEEP FOOD HOT

    High food temperatures (165°F to 212°F) reached in boiling, baking, frying, and roasting kill most food poisoning bacteria. If you want to delay serving cooked food, though, you have to keep it at a holding temperature - roughly 140°F to 165°F. Steam tables and chafing dishes are designed to maintain holding temperatures. But they don’t always keep food hot enough. So it’s not wise to leave hot food out more than 2 hours.

    When cooked food is left out unheated, the possibility of bacterial growth is greater, since the food quickly drops to room temperature where food poisoners multiply.

    To serve hot foods safely - particularly meat and poultry, which are highly affected by food poisoning - follow these rules:

    • Cook thoroughly - Cook meat and poultry to the “doneness” temperatures given in the above chart. To make sure that meat and poultry are cooked all the way through, use a meat thermometer (温度计). Insert the tip into the thickest part of the meat, avoiding fat or bone.

    • Don’t interrupt cooking - Cook meat and poultry completely at one time. Partial cooking may encourage bacterial growth before cooking is complete.

    • Cooking frozen food - Allow frozen food more time to cook - generally 1.5 times the period required for food that has been thawed (解冻).

  • 23、   Calling someone a “birdbrain” is considered rude. It implies that someone has a small brain and thus is not smart. A new study found that the expression doesn’t do birds justice either: Birds’ brains are much bigger than we thought — at least compared to their small bodies.

    An international team of 37 scientists measured the brain volume (脑容量) of hundreds of dinosaurs and extinct birds by scanning fossils of their skulls. The readings were compared to a large database containing the brain sizes of modern birds. These measurements were then analyzed, taking into consideration each bird’s body size — resulting in something called “relative brain size”. The results showed that a dramatic change of birds’ body size happened right after the mass extinction of dinosaurs 66 million years ago.

    According to the study, published on April 23 in the journal Current Biology, birds and dinosaurs had similar brain sizes before the extinction. After the extinction of the dinosaurs, however, birds had to find a way to survive, so they shrank their bodies — since smaller animals need less food — but they kept their big brains.

    “The changed landscape may have caused the rapid evolution of new brainbody scaling patterns (缩放比例) by favoring both larger brains and smaller bodies,” US paleontologist (古生物学家) Daniel Ksepka, who is the lead author of the study, told CNN.

    This “evolutionary brain leap” — as scientists call it — also happened very rapidly. Without dinosaurs, birds quickly repopulated. They came in all types and sizes, which contributed to the diverse species of birds we see today.

    But among all the bird species, certain ones “show above average rates of brain and body size evolution”, study co-author Adam Smith at Clemson University, US, said in a statement — with crows and parrots being the most evident. In fact, previous studies have already discovered that these birds have an amazing cognitive capacity (认知能力). They are able to use tools, imitate human speech and even remember human faces.

    So, in the words of Smith, “calling someone ‘birdbrained’ is actually quite a compliment (恭维)”!

    Colorado, a former reserve for gray wolves, has narrowly passed a vote to reintroduce gray wolves in the state's forests and mountain ranges. Wolf supporters and conservationists connect the animals' benefits with the environment. Gray wolves help maintain healthy elk and deer populations and help limit overgrazing, which can lead to soil erosion. Wolf opponents, on the other hand, fear increased livestock deaths and greater risk to farmers and rangers in rural areas because hunting and livestock raising arc among the biggest careers in western states.
